Egg and Potato Scrambler

  • 7 potatos (baked & cubed)egg and potato scrambler
  • 4 eggs
  • 1 bell pepper (diced)
  • 1 medium onion (diced)
  • 1 tea spoon of olive oil
  • Jones’ Mock Salt™

Bake potato’s in a 450 degree oven for one hour or until done. You can bake the potato’s the night before if you wish. Saute bell pepper and onion in olive oil then set aside. Beat eggs and add Jones’ Mock Salt™. Cook eggs until done. Add bell pepper and onion to eggs then add potato’s. Add more Jones’ Mock Salt™ and toss. Serve as a breakfast side dish or alone.
